Varieties: 100% Garnacha. Vines aged 60 to 110 years.
Harvest: Grapes pre-selected and harvested by hand, in 20 kg boxes. The harvest begins in mid-September and lasts until mid-October. Subsequent selection on table. Grapes from the 15 best old wineries, located at altitudes between 300 and 550 m.
Vinification: Fermentation at controlled temperature (24-28ºC). Maceration for 30 days. Alcoholic and malolactic fermentation in stainless steel tanks. A small part is vinified with the stems, to give the wine a feeling of freshness. Gentle filtration before bottling (only if necessary).
Aging: Aging for 12 months in a French tonneau (3000L), lightly to medium toasted. Further aging in stainless steel tanks for 2 months just before bottling.
Tasting: Ruby red of medium to low intensity. Very expressive nose with floral notes and mountain herbs which give it a fresh and fragrant profile. On the palate, a wide range of red fruits, strawberries, raspberries... which bring complexity due to their maturity. We find very soft tannins with a medium body and very well integrated wood.
Food/wine pairings: The freshness of this Garnacha makes it the ideal companion for fatty dishes such as duck breast, creamy cheeses and pork trotters. Highly recommended with mushroom risottos and grilled white meats.
Production: 3.500 bottles (75cl.)
