The legend of Tokaj has grown steadily over its four hundred year history, but it was not until 1630 that the grandeur of the Oremus vineyard was first spoken of.
Today, it is the one that receives the most universal praise.
The production of Aszú wine (tears wine) is a meticulous process that is only possible in exceptional vintages and under special conditions that favor the development of “Botrytis cinerea” (noble rot). For hundreds of years, it has been made in the same way, adding to a barrel of "Gönc" (136 liters) of must, 3 bags (puttonyos) of 25 kg of noble Aszú berries. Aszú berries are macerated until they swell and are then delicately pressed.
Fermentation takes place in new Hungarian oak barrels, a slow process that can take up to four weeks. The aging process is completed in 136 and 200 liter barrels for 2 years and bottled for another year.
Aszú 3 Puttonyos is an elegant and fresh wine, with a balanced acidity that makes it a vibrant but velvety wine.
2016 VINEYARD CYCLE: The winter was long and cool followed by cold showers in February while a dry and mild spring caused an early budburst of the Furmint vines from April 8th. Flowering took place in early June and a dry season was ideal for fruit set. Summer temperatures have been mild with scattered showers throughout the summer months. Early and rapid maturation favored the wine with rich aromas and balanced acidity.
The abundant rainfall at the beginning of September contributed to the high quality of the Aszú grapes.
STORAGE, SERVICE AND CONSUMPTION: This wine can be drunk now, but it can be stored for 40 years under optimal conditions: 12-14°C and 60% relative humidity.
Recommended service temperature is 8 ºC
PRODUCTION: 34,692 bottles of 50 cl.
