The late harvests are made from a blend of different varieties. Among them, the Furmint is highlighted, which by its acidity creates the perfect balance against the sweetness, while the Hárslevelű adds softness and a silky texture. Köverszőlő and Zéta increase the fruity and mellow character, as well as the vigor of the wine. And let's not forget the golden Sárga Muskotály which polishes the bouquet of the wine.
For this wine, clusters are needed in which at least half of the berries are noble Aszú grains, that is, where the noble rot has reached a significant level.
The must from the late harvest ferments slowly, so slow that at the end of the cellar roofs are frequently covered with frost and snow. Fermentation stops by itself at around 12% alcohol.
The wine rests for another 6 months in the small wooden barrels of the underground cellars, and is then refined for another year in the bottle.
In its character, it is the floral tones that predominate, mixed with tones of citrus and mellow. Elegant and fine bouquet, its palate is rich and persistent. The fine acidity and the sweet fruity character strike a perfect balance.
