The making of Aszú wine (draining wine) is a meticulous process, which requires a lot of patience and a wealth of knowledge. It is only possible in good vintages, when nature provides rains at the end of summer and a sunny and windy period at the beginning of autumn, indispensable conditions for the process of formation of noble grains. The berries swollen with humidity split open, the " Botrytis cinerea Settles on their skin, and the noble rot is unleashed.
For its development, the same formulas have continued to apply for hundreds of years:
To the must that fits into a “de Gönc” barrel, that is to say 136 liters, we add 3, 5 or 6 23 kg casks (in Hungarian: “puttony”) of noble Aszú grains. We macerate the noble Aszú berries with the must and then we wait a day or two for the grains to swell and pass through the pressing.
The fermentation of Aszú musts is a slow process that can sometimes take up to two months. We put them in a wooden barrel and leave them in a protected press, waiting for the fermentation to finish by itself. We then add a little Eszencia, which we have taken drop by drop from the Aszú berries. With this, we symbolically give him back his soul, materialized in Eszencia.
Aszú wines are aged in barrels in small wooden barrels, 136 liters (called "de Gönc"), and 220 liters ("de Szerednye"). For the manufacture of barrels, we use oak from the mountains that delimit the wine region. Aszú barrel aging takes place in underground cellars dug into the volcanic soil. Here the wine ages for 2 to 3 years, at a permanent temperature and a constant humidity level. After bottling, Oremus Aszú is refined for one year in the bottle, which gives it the opportunity to begin a development path that can even last for several decades.
