Vineyard: Finca de Can Xanet, a two-hectare plot located in the north of Mallorca, in the foothills of the Tramuntana mountain range, with a gentle slope of 2,7% on limestone soil, overlooking the bay of Pollensa .
Viticulture: The vines are cultivated according to reasonable practices to obtain quality grapes: plant cover between the rows, short pruning, green pruning to maintain optimal production, phytosanitary treatments only when necessary and using the least aggressive for the auxiliary fauna, thinning of the bunches after veraison and manual harvesting with selection of the bunches.
Anada: The year 2020 started with abundant rains at the end of January and quite frequent throughout the spring, which allowed us to protect ourselves against mildew and powdery mildew, which fortunately did not affect only an insignificant number of leaves. A hot, dry summer followed, with rain again from mid-September until autumn, and then into December. The quality of the grapes was very good.
Vinification: The grapes were cooled in a chamber at 8ºC, then transferred to the cellar. The grapes were destemmed directly from a 25 hl tapered wooden vat to avoid pumping. Fermentation with its own yeasts between 25 and 29ºC for 15 days, with two punching downs per day, followed by a light maceration. The malolactic fermentation took place in vats, before being transferred to barrels.
Aging: The wine was aged for 12 months in second, third and fourth year French oak barrels. Temperature controlled. After blending, it was kept in vats for almost 5 months until bottling on May 18, 2022.
Tasting notes: It is a bouquet of flowers where rose coexists with fern, wild herbs and red fruits. It is fresh, reminiscent of gooseberry and grenadine. Sibila is a tasty, fruity and marginal wine to get out of the monotony and surprise.
