Vineyard: Finca de Can Xanet, a two-hectare plot located in the north of Mallorca, in the foothills of the Tramuntana mountain range, with a gentle slope of 2,7% on limestone soil, overlooking the bay of Pollensa .
Viticulture: The vines are cultivated according to reasonable practices to obtain quality grapes: vegetal cover between the rows, short pruning, green pruning to maintain optimal production, phytosanitary treatments only when necessary and using the least aggressive for the auxiliary fauna, thinning of the bunches after veraison and manual harvesting with selection of the bunches.
Harvest: 2019 was a drier year than 2018 with little rainfall in the first half and some rainfall in August and especially after the venndimia, in autumn and at the beginning of winter.
Vinification: After a day in the cellar at 8ºC, the grapes were transferred to the cellar. The grapes were destemmed on the frustoconical wooden vats, so as not to have to pump them. It fermented with its own yeasts, between 25ºC and 29ºC for 15 days, with two punching downs per day, followed by a week's maceration. The malolactic fermentation took place in the vats, before being transferred to barrels.
Aging: The wine was aged for twelve months in 225 liter French oak barrels (23% new barrels, 23% one-year-old barrels, 23% two-year-old barrels and 31% three-year-old barrels ) at a controlled temperature. After blending, it was kept in vats for 6 months until bottling on April 15, 2021, and in bottle until now.
Tasting Notes: Cadmo has a bright cherry color with a purplish edge. There are mountain herbs, fruits in liqueur and very grilled (roasted). On the palate, it is round, tasty and mineral.
Grapes: 50% Syrah, 22,5% Mantonegro, 15% Gorgollassa, 12,5% Callet.
