Region: Like local wines in France, Vino de la Tierra de Castilla is a Spanish protected geographical indication grouping together wines produced in the autonomous region of Castile-La Mancha. Limestone and clay soils are found at an altitude of 700 meters and rainfall is scarce.
Tasting Notes: Intense pink color with aromas of fresh fruit and red berries. The palate is light and balanced with fresh and fruity features.
Pairings: Ideal with seafood, fish and vegetable soups.
Technical information: Strict ripening controls are carried out on the vine to obtain a well-balanced wine with the right levels of sweetness and acidity. The must first goes through a short period of cold maceration that lasts between 8 and 10 hours. Fermentation then takes place at a controlled temperature of 16ºC to 18ºC for a period of up to 10 days, resulting in a light, pure and fruity wine.
