Aging: 8 months in American and French oak
Located south of Monte Yerga, on the sunny slope, the Cuesta de la Reina estate starts at an altitude of 450 meters and rises to 800 meters. The clay-limestone soils are very poor and contain an abundance of rocks. The 120 hectare estate has been in the family for four generations and the family itself has always cultivated the vineyard. The average age of the vines is well over 40 years old.
After meticulous monitoring of the vineyard, the grapes are harvested at optimal maturity. The harvest is done manually by selecting the healthy and ripe grapes and rejecting the bad and deteriorated ones. The grapes are collected in fruit boxes to avoid any form of crushing. Once in the cellar, the grapes are selected again on a selection conveyor belt.
PREPARATION: No mechanical system was used during the development process. This is based on gravity to avoid damaging the grapes. Fermentation took place in stainless steel tanks with native yeasts from the same vineyard, controlling the temperature at 30°C. At the end of fermentation, maceration was extended by 10 days. After devatting, the wine was transferred to new fine American and French oak barrels where it aged for 8 months. There were two rackings during the aging process. After light filtration, the wine was bottled and remained in the cellar for 12 months before being marketed.
TASTING NOTES: Well-covered cherry red. Intense aromas of black fruits and oak. Flavorful with round tannins and depth of ripe fruit, spicy with great structure.
PAIRING WITH FOOD: Ideal to accompany stews, roasted red meats and mature cheeses.
