Grape varieties: 40% Cabernet Sauvignon, 30% Garnacha and 30% Merlot
Alcohol: 14%.
Aging: 16 months in new French and American oak barrels.
PREPARATION: The grapes come from vineyards with an average age of 60 years located on the banks of Navarre, under the influence of the Moncayo mountain. The grapes are first selected by hand in the vineyard, then, in the cellar, the grapes are selected one by one to guarantee the highest quality of the wine. Fermentation takes place in stainless steel tanks with indigenous yeasts from the vineyard itself, at a controlled temperature of 30ºC. After maceration for 30 days, the wine is transferred to new French (70%) and American (30%) oak barrels and remains there for 16 months. During the aging process, the barrels were racked four times. After bottling, the wine spent 12 months in the cellar before being marketed.
Tasting: Deep cherry color with purple reflections. On the nose, a floral profile with notes of wild berries and well-integrated roasted oak background with a light touch of green peppers. We also perceive aromas of black fruits (plums) at their best degree of maturity. The palate is round with a fruity charge and fresh acidity. Tasty and persistent finish.
Accompaniment: It will go perfectly with red meats and game. In addition, it goes perfectly with sheep's milk cheeses and matured and semi-matured blue cheeses.
