In addition to providing us with extraordinary wines, our own Albariño grape has allowed us to perpetuate a wise tradition of the region: to produce, since the beginning of the 90s, a brandy of herbs born from the maceration of white marc freshly distilled with native herbs from the O Rosal Valley (Rías Baixas) in our artisanal copper stills.
The origin, our grapes: we have one of the best vineyards of the Albariño variety in Rías Baixas and in all of Galicia. More than 70 hectares located in this privileged wine-growing area, which we maintain throughout the year, offer us grapes of great quality, freshness and acidity for wines with floral aromas, very delicate flavors and remarkable balance. . These characteristics are also found in the bagasse (skins) that we carefully select after each vinification to produce this Aguardiente de Hierbas.
This is how we make it: according to the wise traditional method, our six stills are the scene of the double distillation over direct heat that we carry out very slowly. We thus eliminate the “heads” and “tails” of the process and select only the “heart” pomace, which is optimal for this extraordinarily fine and creamy eau-de-vie. After a month-long maceration with a selection of nine aromatic herbs from the lush O Rosal Valley, we age it for a year in American oak barrels. The end result: a perfect and characteristic combination of the delicacy of white marc, the aroma of herbs and the spices of oak.
Here's how we taste it: Our Aguardiente de Hierbas has a shiny golden color. On the nose, we quickly appreciate its expressiveness and the richness of its aromas of ripe fruit, mountain herbs, flowers, dried herbs and dried fruits. On the palate it is balanced, elegant, long, balsamic and tasty. Its finesse, aroma and explosiveness conquer lovers of this spirit and take us to this magical Galician destination.
How to taste it: Ideal, in small sips, at the end of a meal and at a serving temperature between 0 and 5ºC.
