Harvest: As in previous years, bud burst started early, in mid-March. The spring, drier and warmer than usual in the region, was followed by an extremely hot and dry summer. The Atlantic influence having been milder than in previous years, the good climatic conditions allowed the vines to continue to ripen until the end of their cycle in perfect sanitary conditions. At the beginning of September, after a much needed drizzle, the mild weather allowed us to finish the harvest without problems.
Vineyards, Grapes and Aging: 100% Albariño grapes selected from our plots in the O Rosal and O Salnés subzones (DO Rías Baixas). After an exhaustive control of the maturation of the different plots, each with specific variations in terms of soil and orientation, we started the harvest of our Silvosa vineyard in O Rosal on September 6th. Three days later we started in O Salnés, further north in the Viñadeiro vineyard. After an initial selection of the bunches, we hand-picked the grapes in small crates and transported them in refrigerated vehicles to the winery. Upon receipt, the optical sorting machine discarded grapes that did not meet our rigorous quality standards. Before fermentation at 15ºC, we cooled the must to 10ºC and pressed it in an inert atmosphere to prevent oxidation. Given the excellent balance of the musts, we decided not to carry out malolactic fermentation this year.
