LIMITED PRODUCTION
Colección 125 was first released in 1985 to commemorate the 125th anniversary of the winery's first export in 1860. Some time later, in 1993, the first vintage of its Chardonnay was released, which today features among the best whites.
Finca Legardeta is located at the geographical limit of Tempranillo cultivation, which is in fact the northern border of this grape variety.
In Legardeta, Tempranillo is grown at medium altitude and planted in less fertile soils, which is the starting point for obtaining balanced vegetation, controlled production and medium-sized clusters and berries. On the other hand, the particular climatic conditions allow this variety to ripen to perfection, without over-ripening and maintaining optimal acidity values to produce wines with character, freshness and aging capacity.
The Colección 125 Reserva comes from the selection of the best plots of Tempranillo grapes from the Legardeta estate, which are carefully harvested by hand in small 200 kg bins. Later, in the cellar, the grapes are selected and vatted by gravity in 20 kg stainless steel vats, where the wine ferments at a controlled temperature. During this process, it is essential to carry out gentle extraction by manual pumping. Once the malolactic fermentation is complete, the wine is transported by gravity into French oak barrels where it will remain, depending on the characteristics of the vintage, between 000 and 15 months.

VINIFICATION: Selection of the best plots of Tempranillo at their optimal maturation point. The harvest is manual and after a light cold maceration, the must ferments at a controlled temperature. Throughout this process, it is essential to carry out gentle extraction by manual pumping. Once malolactic fermentation is complete, the wine is transferred by gravity to French oak barrels.
TASTING NOTE: Intense and deep cherry color. On the nose, black fruits (blueberry jam), blackberry and sloe predominate, accompanied by toasted and spicy notes. Full-bodied, flavorful wine with balanced acidity and a long aftertaste.
