Manual harvest, Fermentation with indigenous yeasts in wooden vats. Aging for 22 months in barrels made from our chosen oak. 80% of the wood comes from French oak and 20% from Central European and American oak.
Before bottling, the wine is fined using fresh egg whites. It is then left to refine in our bottle cellar for a minimum of 9 months before being put on sale.
The wine has a brilliant ruby red color with medium depth and a garnet edge. Intense and complex on the nose, where we find primary aromas of fruits such as raspberries and blackberries, secondary aromas of vanilla and liquorice and a subtle touch of tertiary aromas such as chocolate and ripe fruit.
The palate is very well balanced, with good acidity and soft tannins. The finish is long and fruity. Perfect to be tasted now, but also thanks to its great balance and structure, a wine that you can keep for several years.
This wine will go perfectly with meat dishes, such as T-bone steak, but also cold cuts and all kinds of stews.
