"Costers" means slopes: these are north-east facing slopes and ancient granite terraces, so the vines receive the sun early in the morning but are in the shade from 17 p.m., which leads to a cooler night temperature, high acidity, long maturation, late harvesting and a much more pronounced polyphenolic structure, especially in the ripe (but not harsh) tannins.

Fermentation at controlled temperature (27-29ºC; natural yeast)
Maceration: 14-21 days; all varieties were vinified separately.

Aging: 12 months in new and one-year-old French oak barrels, lightly and medium toasted
Vineyards: Age of the vines: 40-75 years old Garnacha and Cariñena, 15-25 years old Cabernet Sauvignon.
Tasting note: Deep ruby red color. Complex aromas of ripe cherries, plums, small black berries and flavors of vanilla, smoke and toasty oak. Full-bodied with soft tannins, wonderful fresh acidity; finely glycerinated sweetness; good length.
Accompaniment: Lamb, rib steak, game (partridge, quail, rabbit); pizza, pasta; stews, casseroles, vegetables (mussaka, ratatouille), cheese.
