The three varieties used for Chic come from the Penedes region, with a Mediterranean climate, with mild winters and hot summers.
After the manual picking of each variety, the grapes are destemmed separately and the pulp is cooled to 14 ° C before pneumatic pressing at 0,2 bar. Then the wort is separated. Fermentation takes place in stainless steel tanks at a controlled temperature between I 6 and 18 ° C.
After the assembly of the three varieties, a gentle clarification is carried out, as well as a stabilization of the scale and a final filtering.
The second fermentation takes place in the bottle according to the traditional method, with a minimum aging on lees of II months.
Visual appearance: Greenish yellow with golden reflections. Fine and persistent bubbles.
Aroma: aromas of citrus, lime and green apple.
Taste: Elegant and distinctive, with hints of white fruits and refreshing acidity.
It makes a delicious appetizer and an ideal companion for seafood and savory pies and salads.
