On the palate, it is fresh, unctuous, combining fruity notes with subtle notes from malolactic transformation and aging in barrels (fresh butter, bakery notes, nuances of vanilla and cinnamon).
Elaboration: Manual harvest and selection. 6 months in new French oak barrels of 500l. 18 days of alcoholic fermentation in barrels with selected yeasts at a temperature of 16 – 18C. Batonnage carried out during the stay in barrel.

Serving temperature: Serve at 10 – 12 ºC
Accompaniment: Shellfish, fish, grilled white meats. Asian cuisine (sushi, tataki). Vegetables and quiches, cheeses (goat cheese and mozzarella).
Aging in barrels: 6 months in new French oak barrels of 500l.
