Our best-known cava is a Brut Nature made from the free juice of grapes from our Espiells (Can Rius), La Cuscona and Mediona estates. It is characterized by its brilliant pale gold color. Its aromatic palette is rich and elegant, with a development that begins with notes of ripe white fruit and then gives way to the nuances typical of aging: bakery, toast, spices... The palate is extremely seductive, offering freshness, texture. pleasant and a long finish in which the aromatic memories of white fruits reappear.
Origin: Made with the trilogy of white grapes from Penedès: clay-silt between 220-250 m above sea level, respectively. Average age of the vineyard: 500 years.
Vinification: gentle crushing to obtain free-run juice. Static drawing at low temperature. First fermentation in stainless steel vats at controlled temperature, with separation of the grape varieties. Assembly, second fermentation in bottle with MCR (rectified concentrated must).
Minimum aging of 36 months in bottle. No addition of expedition liqueur.
2019 vintage: The slower ripening of the grapes compared to the previous year led to a later start to the harvest, which gave an excellent balance between alcohol content and acidity. In a virtually dry wine year, timely summer rains allowed for a bumper harvest.
Tasting: Bright yellow color with golden highlights. Fruity, fresh apple character, with notes of white flowers and Mediterranean aromatic plants, such as rosemary, and nuances of lightly toasted bread and dried fruit. Very good balance between body and acidity. It stands out for its raw natural style – without added sugar –, its fresh and deep character and its very well integrated bubbles.
The pairing: Perfect with jamón ibérico de bellota, but also an excellent counterpoint to a vichysoisse with toasted almonds, a suckling pig with apple puree and a camembert and walnut tart.
