Pairing: Wheat beers, white wines fermented in barrels, dry Cava and red wines of the “crianza” type. The best accompaniments for Chusco are jams, quince jelly, dried fruits and nuts or cornbread.
View: Chusco is a dry textured cheese, with medium sized eyes when cut. Its appearance is hard and stable.
Taste: Grainy and buttery on the palate. High intensity residual taste that appears together with a slight spiciness. Great persistence in the mouth.
Smell: Aromas of sheep's milk of great intensity with hints of dried fruit and ripe sweet fruit.
Touch: Slight notes of roughness due to aging.
Tasting advice: To be consumed at an optimal temperature of 16ºC, open at least 20 minutes before serving and leave at room temperature to enjoy all its aroma and all its flavor.
Recommended cut: cubes and wedges about 2 cm thick and about 5 mm thick.
