TASTING NOTES
Color: Clean and bright, deep intense purple color with a bluish edge. Tears tinged in abundance.
Nose: Great intensity, with aromas of candied red fruits, yogurt (dairy), dried figs, vanilla, sloe, blackcurrant, caramel and white chocolate. Very elegant contribution from barrel aging with a nice balance between fruit and oak. Elegant and focused.
Taste: Creamy, robust, but not rough, and fleshy. It unfolds in the mouth to create a feeling of fullness which gives it character, leaving a fresh and clean finish. Very long and persistent.
Food and wine pairing: Recommended especially for medium-maturing sheep and goat cheeses. With meat, it is best to use it as an accompaniment to lamb and goat. It can also be paired with veal and beef. Ideal for stews, ham and bean stew.
VINIFICATION: Fermentation in stainless steel tanks, at controlled temperature. Maceration for 17 days.
AGING: 10 months in American oak barrels
