Region: Like local wines in France, Vino de la Tierra de Castilla is a Spanish protected geographical indication grouping together wines produced in the autonomous region of Castile-La Mancha. Limestone and clay soils are found at an altitude of 700 meters and rainfall is scarce.
Tasting Notes: Pale yellow color with golden tints. Its nose has intense aromas of apple, peach, fennel and tropical fruits. Its palate has a creamy sweetness with mineral and fruity hints. A pleasant, clear, fresh and sweet finish on the palate.
Pairings: An ideal accompaniment to dishes based on pasta, seafood and fresh cheeses.
Technical information: The grapes are harvested at perfect maturity to obtain a well-balanced wine with excellent levels of sweetness and acidity. The wine undergoes a short cold maceration period which lasts about 6 hours. Fermentation takes place in stainless steel tanks at a controlled temperature between 14ºC and 16ºC for 12-15 days. It is followed by a short period of maturation on fine lees, which gives birth to an elegant, fresh and fruity wine.
