Designation of Origin Calatayud
Description: Baltasar Gracián is the main range of the winery. High altitude vineyards, different orientations and exceptional soils of slate and gravel which, combined with the age of the vines, traditionally conducted in goblet, produce wines of exquisite quality.
Characteristics of the vineyard: selection of Garnacha vines over 60 years old, located in the hills of the Sierra Santa Cruz, with quartzite and slate soils.
Vinification details: The grapes are destemmed and not crushed, with one-month macerations and delicate pumping over and punching down. Aged for 12 months in French tuns and 50 hl vats for better balance and better preservation of Garnacha aromas.
Tasting: Cherry red color. Aromas of berries and red fruits that transport us to the mountain vineyards where the old vines of Garnacha are located. Accompanied by subtle woody notes, as well as balsamic and mineral aromas. Its excellent balance between alcohol and acidity makes it pleasant, elegant, balsamic, soft and fresh on the palate.
