Viticulture: The grape (Pedro Ximénez), the soil (Albariza) and the climate (extreme summer) are determining factors in the viticulture of Montilla wines.
Wine making: Criaderas and solera system, a traditional method involving rows of old American oak barrels under a clear layer of yeast known as “Velo de flor”. Then it is slightly sweetened with concentrated must. It is a pale sweet wine, which preserves the color and freshness of the Fino with a soft sweetness that combines wonderfully.
Aging: Our Alvear Pale Cream is organically aged under a transparent layer that the yeast creates on the wine, known as velo de flor, which prevents oxidation of the wine and gives it its characteristic aroma and flavor. At least 2 years
Comments: Alvear Cream is an Oloroso sweetened with Pedro Ximénez sweet wine. Golden in color, it has a delicate and flowery aroma. It is a slightly sweet Fino with a moderately sweet taste. The palate is magnificent with subtle hints of flowers, dried fruits, toasted nuts and an unmistakable sweetness. Dark and creamy.
