It belongs to the Particular collection, a limited production that pays homage to the ancient traditions of the winemakers of the winery.
Particular, a cellar that takes up the traditional methods of wine making, taking inspiration from the simple, hand-drawn graphics that the winemakers themselves made to differentiate between different varieties of wine and vintages.
Pre-fermentation and post-fermentation maceration for 30 days, daily pumping over, fermentation temperature 28-30 ° C, malolactic fermentation in barrels for one month, racking in tanks for stabilization and aging in barrels for a minimum of 6 months, up to 14 months.
With a beautiful cherry red color, well covered, its aroma is reminiscent of ripe black fruit, with balsamic nuances and subtle spices, given by its aging in barrels. On the palate, it presents a powerful, fleshy and very tasty entry, with great persistence, fruity and ripe.
Serving temperature: 16º – 18º C.
Pairing: All types of meat, mainly red meats and stews, as well as fatty fish.
