Description: Clos Baltasar is a wine born from the blending of small vinifications of grapes from very singular vineyards in the most typical areas of the DO Calatayud. Made with old Garnacha accompanied by a small percentage of other varieties such as Miguel de Arco, Bobal and Moristel present in the vineyard.
Characteristics of the vineyard: Old hillside Garnacha from a selection of small plots of vines in the villages of Atea and Acered (Sierra Santa Cruz), in the heart of the Iberian mountain range. Hill and red slate soils. Average altitude of 900 meters. The selection criteria for this vineyard include northern orientations with fewer hours of sunshine, seeking the most floral and continental character.
Vinification details: 25% of the grapes are destemmed, 75% in whole bunches. Cold maceration, fermentation at low temperature in wooden vats and cement vats for about 21 days. Combination of aging in Nomblot eggs and French oak barrels of 300 and 500 liters.
