TASTING NOTES
Color: Lemon yellow with frosty green reflections, clean, shiny and very glyceric legs.
Nose: Clean aromatic ensemble, with great intensity. We find aromas of apricot, peach, fennel, green almond shell, anise, fresh fruit (grapefruit, green apple), notes of freshly cut hay and light smoky touches mixed with notes mineral.
Palate: Velvety and silky entry developing towards a great volume and a great structure. The balanced acidity gives freshness and nerve. Long and tasty attack, fruity with an aftertaste sensation even more intense than in the nose phase, and notes of fennel and anise that stand out.
Food and wine pairing: Fresh seafood and white fish. Rice in fish broth. Steamed rice. Gratinated pasta and white meats.
VINIFICATION: Fermentation in stainless steel vats with temperature control. Fermentation / maceration 36 days
AGING: 5 months on lees with weekly stirring.
