On October 15th, we started hand-picking the grapes, transporting them in small 20kg / 44lb crates. A first selection was made in the vineyard, and we only harvested the best bunches, perfectly ripe and in perfect condition. A second selection was made at the cellar sorting table. After gentle destemming and crushing, the grapes were placed in vats where they underwent alcoholic fermentation at a temperature below 28 ° C / 82 ° F. After 16 days of fermentation and maceration, the wine underwent malolactic fermentation in French oak barrels, with weekly stirring over a period of two months. It was aged for 22 months in new French oak barrels (70%) and the rest in French oak barrels with two wines. We have racked this wine three times, using traditional methods, and bottled it in February 2019.
