Harvest: We define it as "very Galician". Thanks to the good conditions of early spring, germination took place ten days earlier than usual. Periodic rains favored the good development of the plant and the mild temperature and the good weather allowed a correct flowering. The summer was slightly cold and dry, except in September when several Atlantic fronts, with instability and moderate rainfall, led to a late start to the harvest, which was one of the longest in recent years due to interruptions caused by the rainy season.
The harvest ended on October 6.
Vineyards, Grapes and Aging: 100% Albariño grapes selected from our plots of O Rosal and O Salnés (DO Rías Baixas).
We start the harvest on September 16 in the Silvosa estate (O Rosal) and a day later in the Viñadeiro estate (O Salnés). After an initial selection of the bunches in the field, we manually harvest the grapes in small crates, which we transport refrigerated to the cellar. For the first time, the entire harvest went through an optical sorting machine – the first winery in Rías Baixas equipped with this system – eliminating grapes that did not meet the demanding parameters of our technicians. After cooling and maceration, the grapes were pressed in an inert atmosphere with nitrogen to prevent oxidation. Once racked, the clean wort fermented at 15ºC. In this harvest, 33% of the tanks fermented at 15ºC.
33% of the vats underwent malolactic fermentation. We keep the wine until it is We keep the wine until bottling with its fine lees which, thanks to periodic stirring, are kept in suspension, thus adding complexity.
