Chardonnay has found a unique redoubt in Legardeta, with perfect climatic and pedological conditions to obtain typicity, complexity and an unusual aging capacity reserved for very few terroirs in the world.
Colección 125 Blanco comes from the selection of grapes from a single plot, located on a hillside with a clay texture, facing north and at an altitude of 480 m. This component and the influence of the Atlantic climate are the main reasons for the uniqueness of this wine. This component and the influence of the Atlantic-continental climate allow the Chardonnay variety to mature gradually, without dehydration or exaggerated increase in alcohol content, maintaining excellent levels of acidity, aromatic potential and expressiveness.
The grapes are harvested by hand in crates so that they arrive intact at the cellar where they are selected. After a short maceration, the grapes are pressed at low pressure, selecting only the best free-run juice, which is then placed in 225 liter barrels where it ferments and ages with its own lees in suspension for about a year.
